So, I just had to post that tonight for dinner - I actually made the meal almost entirely from things I got on sale and/or with coupons! We got home late today from running errands and I opened the pantry to see what I could make quickly. The first thing that caught my eye was a can of enchilada sauce. I remembered that I'd wanted to try out my sister's Enchilada Casserole recipe and checked to see if I had the ingredients. I had to modify it a bit, but I had everything I needed.
Shredded Cheese - bought with in-ad coupon at Albertsons about 3 weeks ago
Hamburger - bought on sale at Albertsons on Thursday
Flour shells - bought with in-ad coupon at Albertsons on Thursday
Enchilada Sauce - bought last week on sale at Albertsons
Refried Beans (served on the side) - bought a few weeks ago at Albertsons with the catalina deal
I had the tomato sauce already + all the fixins in my fridge (sour cream, salsa, olives) + some (probably stale) chips.
I was able to defrost the hamburger (in the microwave), brown it, put together the casserole, and bake it in about 40 minutes. Awesome! and we didn't have to resort to going out to eat or just having cereal like we usually end up doing on Saturday nights.
